Spicy Eggplant (Yu Xiang Qie Zi)



Does anyone have a good recipe for this dish? I haven't found one yet, for the moment, I use Yeo's pre-mix which is pretty tasty with extra minced garlic and dried shrimps. I like to add a bunch of glass noodles sometimes for a heavier meal.

oh! I love eggplant in garlic sc!! Usually I microwave the eggplant first b4 stir -fry wt spicy garlic sc.I know restaurant would fry the eggplant into deep oil first,reason look good ,taste good and faster to cook!But the eggplant swimming in the oil,bad for health!

I don't deep fry them neither. I have deep fry phobia - all those splattering and cleaning up to do afterwards, oohlala. Beachlover, I love your blog by the way, way to go!
